When people talk about grilling, most people immediately think of meat – hamburgers, hot dogs, steaks, and similar meats. Meat is not the only thing you can grill, though, and grilling plants for eating can be delicious and amazing!
Corn on the cob is a great option for grilling! That grill char on sweet corn makes the taste amazing! A little butter and salt will enhance the flavor even more.
Grill up a whole salad! Slice or chop some bell peppers – any or all colors, a couple of zucchinis, a few ears of corn, a can of drained and rinsed black beans, and a bit of minced garlic. Toss them in a grill pan with a few tablespoons of olive oil, a bit of maple syrup, and a bit of mustard. Squeeze on some lemon or lime juice and a bit of balsamic vinegar and season with salt and pepper to taste.
Eggplant slices grill nicely. Salt slices and let them sit for an hour; the liquid in them will drain out. Toss the liquid and rinse the slices in cold water, then gently squeeze dry with paper towels or hand towels. Brush oil on the slices, add a bit of pepper, and grill until browned (about five minutes) then turn over and brown the other side.
Grilled vegetable tacos are a great summer dish. Grill your choice of vegetables for filling; some good ones are avocado, bell pepper, zucchini, baby mushrooms, cherry tomatoes, corn, and onion. Grill corn tortillas to soften (wipe on oil, lemon or lime, and seasoning, if desired) about sixty seconds per side, then fold loosely and let cool before filling. Enjoy!
Portobello mushrooms are a great substitute for burgers, because they are the right size and have good flavor. Marinate them in a mixture of olive oil, balsamic vinegar, garlic, salt and pepper for a half hour or so (longer if you have time) after cleaning them with a damp towel (not wet). You can scoop out the gills if preferred. With the grill at medium high to high heat, grill the mushrooms 4-7 minutes per side, with good grill marks and softer flesh (but not mushy). Serve immediately on toasted bread with mayonnaise, tomatoes, and onions for a delicious dinner entrée.
Grilled pizza is one of the new fads, and a wonderful quick meal on the grill. If you make your own dough, you will want to get that ready the night before, for simplicity, but if you use premade pizza dough, it is a very quick prep. Using a grill pan on your grill or on your stove will support the pizza. Stretch the dough while your pan is pre-heating. Shape your crust. Oil the pan with spray or a brush of olive oil, and gently lay the crust onto the hot pan. When the top bubbles, after a couple minutes, flip it over and grill another couple minutes, then flip it back over and put your toppings on. Use heated sauce to help heat the other toppings or place it back just for a minute to warm up the toppings and melt the cheese if you added that, but be careful not to burn the crust in the process.
Carrots are the right size to use as substitute “hot dogs.” Soak them in a marinade for better flavor and more even cooking. A good marinade can be made of soy sauce, lemon or lime juice, apple cider vinegar, maple syrup, and a bit of liquid smoke. Then grill for about ten minutes and prep them like hot dogs!
When grilling vegetables, oil lightly. Sprinkle on seasoning, and grill just a few minutes per side.
If you use wooden skewers, be sure to soak them first so they do not catch fire.

Baby potatoes are a good size to grill because they will cook through more quickly.
Fruits can be grilled, too! Try pineapple rings or peach slices.
